EVOO = NO NO


Rachel Ray is in big trouble.  As the woman who popularized the term "EVOO" (extra-virgin olive oil), she will be dismayed to learn  this about her beloved oil. A recent study at the University of Maryland found that olive oil
may reduce the blood flow to arteries by about one-third immediately after consumption. This has serious implications for blood clotting.

In addition, olive oil significantly damages the cells that line the inside of  arteries, which causes inflammation leading to atherosclerosis (hardening of the arteries.)

So, while certainly better than a number of other oils, olive oil is probably not our best choice. Canola oil, which is higher in Omega 3, is a better choice.

So, Rachel, please stop with the EVOO already. You'll have to think up a pet name for the canola.
